
Why Drink Freshly Roasted Coffee?

The difference is clear. Fresh coffee is alive while the stale coffee is dead. One is a fresh cook filet mignon and the other is beef jerky. The bubbles emitted are CO2 which help deliver the oils (flavors) to your coffee. As time progresses the less CO2 is in the coffee beans, the coffee begins to lose aromatics, flavors and nuance. Grinding your coffee will also speed up this process. That is why people will promote grinding fresh before brewing.
BUT WAIT!!
There is another side to this coin. There is a thing as TOO FRESH of coffee. Freshly roasted coffee has too much CO2. Coffee needs to rest between 3-7 days depending on the roast level. The lighter the roast, the more it needs to rest and let off some of this excess gas. I know, I know......it's needlessly confusing. But we strive to make it easier. We work to time the resting period with roast schedule and shipping times so that it is ready to consume when you get it.
If properly stored in a dark and cool space (the bag it is shipped in should work perfectly for this), the coffee will be optimal to drink for 4-6 weeks depending on the roast level. Again, the darker the coffee is, the quicker it starts to loose flavor.
